Ingredients
Required:
- Freshly ground black pepper
- Minced raw beef or shallot
- 1/2 teaspoon sugar
- 1 teaspoon salt or more
- 1 1/2 to 3 cups Parmesan or Gruyere cheese, shredded (1/4 to 1/2 cup per serving)
- 2 tablespoons olive oil or more
- 2 1/2 pounds yellow onions
- 3 tablespoons flour
- 3 tablespoons unsalted butter
- 6 to 8 toasted baguette slices
- 8 cups vegetable, chicken, or beef broth
Optional:
- 1/4 cup brandy
- 1/2 cup white wine
Equipment
- Baking dish or sheet
- 4-quart (or larger) heavy pan, such as a Dutch oven or deep sauté pan
- Wooden spoon
- Chefs knife and cutting board
- Oven-safe bowls or mugs (optional)
Steps:
- Peel the onions and slice each half of the onion into thin, evenly sized half moons. Cut the half moon slices in half
- In the pan over medium low heat, melt the butter with the oil
- Add onions and stir when the butter foams up and then settles down
- Cover the pan and cook for 15 minutes on low heat
- Remove the lid. Stir in 1/2 teaspoon sugar, black pepper and 1 teaspoon salt
- Turn up the heat, cook the onions and stir frequently for about 40 minutes to 1 hour until the onions are deeply browned. If the onions scorch or stick to the pan, turn down the heat
- While waiting the onion to turn into a deep walnut color, heat the broth in a separate pot
- Add 3 tablespoons flour to the caramelized onions. Cook and stir for about 1 minute
- Add broth to the caramelized onions, bring to a boil. If you want, add wine. Lower the heat and cover the pan partially. Also, if you want to add spices or herbs, do it now. Cook gently over low heat until the broth is slightly reduced, for about at least 1 hour
- Taste and season with pepper and salt, if you want. You can also add a finishing splash of brandy but this is optional
- Heat the oven to 350 degree Fahrenheit. Divide the soup between small but deep oven-safe bowls. Top each with one or two slice of toasted baguette and sprinkle the cheese in a thick layer over the bread
- Placethe bowls on a baking sheet or in a casserole dish. Bake until the cheese melt thoroughly
- Turn the oven from bake to broil and broil the soup until the cheese is bubbling and browned, or about 1 to 3 minutes. Remove from the oven and leave it to cool for a few minutes before serving on heatproof trivets or dishes.
