Vidalia Onion Dip

Recipe #1
Ingredients
- 1/2 cup Grana Padano cheese, shredded (you can also use Romano or Parmesan)
- 1/2 cup mozzarella, shredded
- 3/4 teaspoon salt
- 1 cup white cheddar cheese, shredded
- 1 scant cup sour cream
- 1 scant cup mayonnaise
- 1 Vidalia onion, weight about 10-12 ounces
- 2 dashes Worcestershire sauce
- 4 dashes hot sauce
Steps
- Set the oven to 375 degrees Fahrenheit
- Peel and slice the onion in half, slice it in half again. Slice 3 of the sections into very fine slices. Take the last piece of the onion and mince. Put the rest of ingredients in a bowl and add the onion. Combine and mix. Season and taste it. Adjust it to how you like it
- Place the mixture in a ovenproof casserole. Bake it until bubbly and browned or about 25 minutes
- While waiting, slice a baguette and place it on a hot grill pan. Toast the slices on both sides
- Serve with the dip

Ingredients
- 2 1/2 cups mayonnaise
- 3 cups Swiss cheese, shredded
- 3 cups Vidalia onions, chopped
- Garlic salt
Steps
- Preheat the oven to 350 degree Fahrenheit
- Mix all the ingredients and pour it into greased 1 1/2 quart baking dish
- Bake the mixture in the oven until becomes lightly brown, or about 35 to 40 minutes
- Serve it with corn chips

Ingredients
- 1/2 cup mayonnaise
- 1/2 cup Parmesan cheese, grated
- 1 cup cheddar cheese, grated
- 2 large chopped Vidalia onions
Steps
- Preheat the oven to 350 degrees Fahrenheit
- Put the mayonnaise, cheeses and onion in a mixing bowl, mix it. Pour the mixture into a small baking dish
- Bake the mixture for about 20 minutes or until the cheese has become bubbly and melted
- Remove it from the oven and serve.

Ingredients
- 1/2 teaspoon black pepper
- 1/2 cup shredded Swiss cheese
- 1/2 cup Parmesan cheese, grated
- 1 finely chopped large Vidalia onion
- 1 teaspoon seasoning salt
- 1 teaspoon Worcestershire sauce
- 1 cup mayonnaise
- 2 teaspoons fresh garlic, minced
- Tabasco sauce
Note: the garlic, black pepper and seasoning salt are not limited to that amount, you can add it to your taste
Steps
- Preheat the oven to 375 degrees Fahrenheit
- Butter oval or 1 or 2 quart round casserole dish
- Put all the ingredients together in a bowl, mix it until combine
- Adjust garlic and Tabasco to taste to the mixture
- Put the casserole dish into the oven
- Bake until the top becomes brown, about 25 minutes
- Sprinkle the mixture with grated Swiss cheese. Put it inside the oven until the cheese has melted, or about 4 to 5 minutes
- Serve with assorted crackers

Ingredients
- 1 cup reduced-fat sour cream
- 1 tablespoon olive oil
- 1 1/4 chives, finely chopped
- 1 1/2 teaspoons white-wine vinegar
- 2 ounces room temperature reduced-fat bar cream cheese
- 2 finely chopped Vidalia onions (weight 1 pound in total)
- Potato chips
- Coarse salt and ground pepper
Steps
- Heat oil in a large skillet over medium heat
- Add onions; season it with pepper and salt. Cook and stir it frequently for 12 to 15 minutes or until it turns golden brown. Leave it, let it cool to room temperature
- Combine chives, vinegar, cream cheese, sour cream and onions in a medium bowl. Season the mixture with pepper and salt. Chill dip for about 1 hour or until it becomes slightly thickened. You can also cover and refrigerate it for two days.
- Serve with the potato chips
